From the brewer

Pour Les Oiseaux is a blend of complex earthy, fruity and light tannic flavors with a crisp and refreshing finish. Brewed with barley, wheat, rye and oats for a golden color and lightly spiced malt flavor. Earthy hay and wild yeast aromas mingle with light notes of Washington wine grapes. Pour Les Oiseaux is aged in French oak white wine barrels with the addition of brettanomyces.

Seemed a lot more fruity-sour than I remembered, and I don't know if that's real or if I've gotten more sophisticated. Either way I hate everything.

Really not meant to be aged. Tastes somewhat inofensive compared to its smell. Lost pretty much all the crisp flavors of the fresher version. Has a very weird underlying funkyness to it.

Lot of aromatic herbs flavors (dill, chive, oregano) some grassy/hay flavors. Interesting yeast bitterness. The mild sourness reminds a lot of white wine.

This beer is really growing on me. The complexity of the brettanonyces and the wine barrel aging just make an awesome combo.

Tangy, sour, acidic bite. Fruity sort of body.

Smells like an apple cider. Complex taste, like a mustard start, somewhat sour sharp-white-wine finish.

Tangy with a strong, fruity, grape opening, followed by a somewhat shocking transition into wine-soaked malt. I never got used to it, but I also really liked it. I'm a sucker for oddness, as long as it's tasty.
