This Northern France inspired strong pale hybrid has gone through a seven month secondary fermentation with the “wild” yeast strain brettanomyces lambicus, then dry hopped in order to meld bright fresh hop aroma and accent with aged wild yeast character. Pear and citrus hops play with tropical fruit, smooth earth, and light hay flavors from the wild yeast. Released annually in the Corbeaux Collection.

2015 release
Somehow this was presenting a lot more herbal flavors then I remembered. It also add a very resinous corriander bitterness to it that I did not seem to pick up the first time.

Smells a little bit like bubble gum. It presents a faint underlying sweetness coupled with a faint sourness. It has a moderately low bitterness. Bubble gum and floral flavors.

Fragrant perfume smell-- citrus sour magnolia. Bitter body and dry bitter finish.

Dry short bitter finish with a lingering sourness. Citrus flavor is of the sour variety, link rind.

Huge banana and clove fragrance, mixed with ... a hint of apple, maybe? Very dry, and taken in small sips it ends with a really pleasing cereal finish. Bigger sips, not as nice. Keep 'em small, hon.
