This ale is brewed from select organic hops grown in the Cowiche Canyon of the Yakima Valley, harvested and cooked in the kettle within 24 hours, creating a unique, once-a-year beer. Over 12o lbs of organic Citra and Simcoe hops are used per batch. The flavor of this classy fresh hop is more akin to a well balanced pale ale than an IPA. Grassy, with a lemony kick, this ale also contains clean, subtly sweet Vienna malts to highlight the unique tartness of the Cowiche grown hops.

Rounded citrus hop flavor, kind of like Asian chewing gum (but in a good way). The flavor is just really, really appealing and unlike the hop presence in nearly any other beer I've tried. Just the barest hint of bitterness on the finish, and no oily resin sheen.
