Named for a long extinct Russian Cave Bear, Ursus Spelaeus is as deep and dark as the caves its namesake inhabited. Spelaeus has thick, rich maltiness with notes of chocolate, coffee, toffee, and subtle licorice in the nose and on the tongue with just enough hops to keep it balanced. The Belgian yeast strain adds touches of fruit, herbs, and spices and aging in the Elijah Craig 12 year old Bourbon Barrel adds the complexity of oak, vanilla with subtle bourbon notes.
