It’s cherry season again, and that means it’s time to peer into the tanks that have been sitting in the cellar for the last 12 months. When we checked in on this slumbering beauty we found her to be funky, refreshingly tart, and devilishly deep crimson. Hood River Valley Bing cherries lend the color and a juicy character. Kept at cellar temperature on whole fruit for 13 months, and served in its own glass.
